The red gold of Taliouine
Every autumn, for three weeks, the plateau east of Taroudant turns purple before dawn.

An hour and a half east of Taroudant, on a high plateau between the two Atlas ranges, the village of Taliouine grows some of the finest saffron in the world. The harvest lasts about three weeks, from late October into November.
Before the sun
The crocus flowers open at dawn and must be picked the same morning, before the heat wilts them. Whole families work the fields by hand, then sit together through the day separating the three red stigmas from each flower.

Why it costs what it costs
It takes around 150,000 flowers to make a kilo of dried saffron. Nothing about it can be done by machine. When you buy it from a cooperative in Taliouine, you're paying a fair price for that patience.
Going there
We arrange a day trip during the harvest: the fields at dawn, a cooperative visit and lunch in a family house. Outside harvest season the cooperatives are still open and the drive across the plateau is beautiful.
